Black
salt is also known as 'kala namak'. It is actually deep chocolate
brown in color at initial rock form. When it is crushed and grinded,
it turns into coffee colour. It's added to Indian fruit salads and
in chutneys, digestive food products as test inhancer in various
cuisions. It is also sprinkled over the popular Indian raitas which
is plain yogurt with cucumbers and tomato. Used sparingly it adds
a special taste on the lines of garlic, onions and asafetida.
The salt is produced in traditonal indigenous process. White salt
is taken into soil vessels. Vessels are heated into high temperature
to melt solid salt. Then various herbs are added to it and that
is being cooled. After being cooled it again become hard and comes
out as black salt in rock form. Toss a little black salt with lemon
juice and cut fruits for a simple, tangy fruit chaat.
